For Lotus Seed Paste: 200g Lotus Seeds
100g Sugar
2 tbsp Vegetable Oil
1 tsp Yeast
1/2 tsp Baking Powder
1/4 tsp Salt
150ml Milk
2 tbsp Sugar
2 tbsp Vegetable Oil
Preparation Method
1. Soak lotus seeds in water for 4 hours. Drain and remove green centers.
2. Boil seeds until soft, about 30 minutes. Drain and blend into a smooth paste.
3. In a pan, cook paste with 100g sugar and 2 tbsp oil over low heat until thick. Cool.
4. For dough, mix flour, yeast, baking powder, salt, and 2 tbsp sugar.
5. Warm milk slightly, add to dry ingredients with 2 tbsp oil. Knead into a smooth dough.
6. Cover dough, let rise for 1 hour until doubled.
7. Divide dough into 12 pieces. Flatten each piece, place a spoonful of lotus paste in center, and seal.
8. Place buns on parchment paper, cover, and let rise for 30 minutes.
9. Steam buns over boiling water for 15 minutes. Serve warm.
